Dolma

You may have heard of a dish called Dolma before. Whatever you have heard is wrong. Not your fault though, even the wiki page for it is wrong. Anyway let’s move on. Get a bowl. A large one. Mix your rice with the canned tomatoes, fresh coriander, chilli, salt and some lemon. Grab your Lebanese white bush marrow. Or as some like to call it, Lebanese zucchini. Good luck finding this in your supermarket by the way (hint: you won’t find it). Hollow out the insides (you probably don’t have the right corer for this part either you barbaric peasant) and keep them. They are tasty. Now your zucchini should be hollow. Oh dear, did you mess up the hollowing out part and poke holes in it? Way to be a failure. Try again.

Stuff your zucchini with the rice mixture you prepared earlier. Place in your pan and cover with water, more lemon, olive oil, salt, dried mint and a bunch of garlic cloves. Add the insides of the zucchini you pored out as well. Once the water starts boiling reduce to low heat, cover and cook for around an hour. You already fucked up the hollowing out part, don’t fuck this up.

Armenians like to cook this dish with a tomato based sauce but that tastes wrong. The lemon variant is far superior. Source: I’m Armenian and I like lemons.
